Even a basket of rolls on a buffet needs a serving utensil, and you want to avoid grabbing bread after multiple hands have already touched it.

So it is an issue if someone might have touched the bread, but the serving utensil that absolutely everyone touched is just fine? What is the logic behind this?

However, unless they are wiping them down every time, that salt shaker, as well as the ketchup and mustard, is full of germs from all the hands that touched it before you.

Same here. If there is one salt at every table, a fraction of people will have touched yours. If there is only one salt for everyone, it would be touched by… everyone. You can absolutely not sanitize every single thing every single time someone touches it. Not to mention that this would very likely make us far more sick in the long term due to less exposure to germs.

I understand where you are coming from, but I can use hand sanitizer after touching a utensil, and the food stays clean. I can’t douse my lunch with alcohol, without ruining it. I have seen some buffets require gloves + utensils. I no longer frequent any buffets, since I find myself over eating too much at them.
