I don’t really have any on my computer (all I use that for is Vim, Firefox, and Git), but on my phone: Orbot (basically Tor as a VPN on your phone).

For the Google Camera situation, there is this thing called Gcam Photos Preview from the CalyxOS team that works so thatyou can preview photos on Google Camera on a custom ROM without Google photos
Does it only work on a custom rom?
I believe so because if I am not mistaken you can not uninstall Google Photos on a stock Android? Gcam Photos Preview has the same name in the system as Google Photos so if Google Photos is installed you can not install Gcam Photos Preview
ah, yeah, I tried disabling and replacing one app, I can’t remember which, but it caused weird problems…
I disabled and uninstalled using adb and it’s fine for me. I use the native gallery which I like.
